pumpkin cupcakes
New recipe of the week is a delicious Pumpkin Cupcakes. Pumpkin is used to be one of the favourite autumn products at the moment so let's enjoy it and try new recipes!
Ingredients:
- 100 g melted butter
- 400 g raw pumpkin, peeled, finely grated & squeezed of excess liquid
- 3 eggs
- 100-150 g granulated sugar
- 1 1/2 teaspoons baking powder
- 3/4 teaspoon baking soda
- pinch salt
- vanilla
- 1 teaspoon ground cinnamon
- 300-320 g all-purpose flour
Method:
- pre-heat oven to 190 degrees C
- in a large bowl, whisk together melted butter, grated pumpkin, eggs and sugar until smooth
- sprinkle baking powder, baking soda, salt, cinanmon, vanilla over batter and whisk until well-combined
- add flour and stir with a spoon, just until mixed
- pour the mixture into the prepared muffin forms
- add. In a small dish, or empty measuring cup, stir sugar and cinnamon together. Sprinkle over top of batter
- bake cupcakes for 20-25 minutes until a tester poked into them come out batter-free
