pumpkin cupcakes


New recipe of the week is a delicious Pumpkin Cupcakes. Pumpkin is used to be one of the favourite autumn products at the moment so let's enjoy it and try new recipes!  
Ingredients:
  • 100 g melted butter
  • 400 g raw pumpkin, peeled, finely grated & squeezed of excess liquid
  • 3 eggs
  • 100-150 g granulated sugar
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • pinch salt
  • vanilla
  • 1 teaspoon ground cinnamon
  • 300-320 g all-purpose flour
Method:
  • pre-heat oven to 190 degrees C
  • in a large bowl, whisk together melted butter, grated pumpkin, eggs and sugar until smooth
  • sprinkle baking powder, baking soda, salt, cinanmon, vanilla over batter and whisk until well-combined
  • add flour and stir with a spoon, just until mixed
  • pour the mixture into the prepared muffin forms
  • add. In a small dish, or empty measuring cup, stir sugar and cinnamon together. Sprinkle over top of batter
  • bake cupcakes for 20-25 minutes until a tester poked into them come out batter-free
